Ingredients
- 6 potatoes (approximate weight: 1,5 kg or 3,3 lb)
- 2 red onions (can be replaced with white onions as well)
- 1 leek (can be replaced with spring onions or scallions)
- 100 g (3,5 oz) canned corn
- 200 g (7 oz) mayonnaise
- salt and pepper to taste
Directions
- Wash and boil the potatoes on their skin for 35 minutes.
- Peel the potatoes from their skin, cut them into cubes, and add them in a large bowl.
- Wash and clean the onions and the leek.
- Finely chop the onions and the leek.
- Strain the corn.
- Add finely chopped onions, leek, and corn over the potatoes.
- Add 200 g of mayonnaise and blend with care.
- Season with salt and pepper to taste.
- Serve.
