Ingredients
- 6 potatoes (approximate weight: 1,5 kg or 3,3 lb)
- 1 celeriac
- 2 pomegranates
- 2 pears
- 1 red onion (can be replaced with white onion as well)
- 3 tbsp vegetable oil
- 2 tbsp apple cider vinegar
- ยฝ tsp sweet paprika
- ยฝ tsp spicy paprika
- salt and pepper to taste
Directions
- Peel off and chop the potatoes and the celeriac into cubes.
- Put the potatoes and the celeriac cubes to boil for 20 minutes with 1 tsp of salt.
- In a large bowl add the oil, vinegar, salt, sweet paprika, spicy paprika, and pepper to taste and mix very well.
- Cut and open the pomegranates into seeds.
- When the vegetables are boiled, strain them well off liquid and add them over the vinegar and oil mix.
- Add chopped pears and pomegranate seeds over the salad and mix with care.
- Season with mint leaves and serve.
