Fruity Potato Salad

Ingredients

  • 6 potatoes (approximate weight: 1,5 kg or 3,3 lb)
  • 1 celeriac
  • 2 pomegranates
  • 2 pears
  • 1 red onion (can be replaced with white onion as well)
  • 3 tbsp vegetable oil
  • 2 tbsp apple cider vinegar
  • ยฝ tsp sweet paprika
  • ยฝ tsp spicy paprika
  • salt and pepper to taste

Directions

  1. Peel off and chop the potatoes and the celeriac into cubes.
  2. Put the potatoes and the celeriac cubes to boil for 20 minutes with 1 tsp of salt.
  3. In a large bowl add the oil, vinegar, salt, sweet paprika, spicy paprika, and pepper to taste and mix very well.
  4. Cut and open the pomegranates into seeds.
  5. When the vegetables are boiled, strain them well off liquid and add them over the vinegar and oil mix.
  6. Add chopped pears and pomegranate seeds over the salad and mix with care.
  7. Season with mint leaves and serve.
