Ingredients
- 200 g (14 oz) smoked salmon
- 4 hard-boiled eggs
- 1 lemon
- 1 onion
- 4 potatoes ( approximate weight: 500 g or 17,6 oz)
- 4 tbsp vegetable oil (preferably sunflower or canola oil)
- 2 tsp mustard
- 1 tsp fresh parsley
- salt and pepper to taste
Directions
- Wash and boil the potatoes on their skin for 35 minutes.
- Peel the potatoes from their skin, cut them into cubes, and add them in a large bowl.
- Cut the salmon into cubes and add them to the potatoes. Proceed the same with the hard-boiled eggs.
- Chop the onion julienne and add it over the potatoes and salmon.
- Make a sauce out of 4 tsp of oil, 2 tsp of mustard, the juice from a lemon, and 1 tsp of fresh parsley.
- Incorporate this sauce with the salad.
- Serve.
