The Art of Endive Salad Perfection


  • 200 g (7 oz) endives
  • 100 g (3,5 oz) radishes
  • 1 leek (can be replaced with 1 scallion)
  • 250 g (8,8 oz) chicken liver (can be replaced with any type of liver or skipped entirely)
  • 100 g (3,5 oz) mayonnaise
  • salt and pepper to taste


  1. Clean the liver very well and put it to boil for 25 minutes in 2 liters of water with 2 tsp of salt.
  2. Wash, clean, and cut the endives, radishes, and leek.
  3. Drain the liver, cut it into small pieces, and add it to a large bowl.
  4. Add the cut vegetables, endives, radishes, and leek (scallion).
  5. Season with salt and pepper to taste.
  6. Add mayonnaise to the salad and mix with care.
  7. Serve.
