Ingredients
- 1 kg (2,2 lb) chicken breast
- 4 mangos (approximate weight: 800 g or 28 oz)
- 4 nectarines
- 1 onion
- 1 parsnip
- 1 kg (2,2 lb) greek yogurt
- 1-2 tsp spicy curry
- salt and pepper to taste
- few peppercorns
Directions
- Put the chicken breast to boil next to 1 onion, 1 parsnip, and a few peppercorns, and let them boil for 40 minutes.
- Peel off the mangos and cut them into cubes.
- Cut the nectarines into cubes.
- Let the chicken breast cool off then proceed to cut into cubes and season it with salt and pepper.
- Mix the yogurt with curry.
- In a large bowl add the cut chicken meat and mix it with cut mangoes and nectarines.
- Add the yogurt and blend with care.
- Season with mint leaves.
- Serve.
