Ingredients
- 4 carrots (approximate weight: 300 g or 10 oz)
- 3-4 spring onions (can be replaced with regular onion)
- 4 bunches of spinach
- 2 tbsp tomato paste
- 3 tomatoes (can be replaced with cherry tomatoes- just convert the ratios)
- 3 tbsp vegetable oil
- salt and pepper to taste
Directions
- Wash, clean, and grate the carrots.
- Wash, clean, and chop the onions.
- Add them in a large bowl.
- Add ripped spinach.
- Separately mix 2 tbsp of tomato paste with finely chopped tomatoes. Season with salt and pepper.
- Add the tomato mixture over the salad and season with 3 tbsp of vegetable oil.
- Blend with care and serve.
