Tangy Pork Sour Soup Delight

Ingredients

  • 500 g pork loin (1,1 lb)
  • 500 g pork bones (1,1 lb)
  • 2 onions (200 g – 7 oz)
  • 2 carrots (200 g – 7 oz)
  • 1 parsnip (100 g – 3,5 oz)
  • 1 bell pepper (100 g – 3,5 oz)
  • 1 small celeriac (100 g – 3,5 oz)
  • 250 ml (1 cup) tomato juice
  • 2 tbsp tomato paste
  • 2 potatoes (200 g – 7 oz)
  • 5 tbsp lemon juice
  • 2 tbsp salt
  • lovage (or celery leaves)
  • parsley

Directions

  1. Wash and cut the meat into medium-sized cubes.
  2. Wash the bones.
  3. In a large pot, put the meat and the bones to boil in 4 liters of water (1 gal) with 1 tbsp of salt for 1 hour.
  4. Collect and remove the foam with a slotted spoon or a strainer. (boiling the meat will create a foam that must be removed)
  5. Prepare the vegetables by peeling and washing them.
  6. Finely dice the onions, carrots, parsnip, celeriac, and bell pepper.
  7. Add the finely diced vegetables in the pot with the meat and complete with 1 liter of water. (2 pints)
  8. Add 250 ml of tomato juice and 2 tbsp of tomato paste.
  9. Let the soup boil together for 25 minutes.
  10. Cut the potatoes into cubes, add them to the soup, and let it boil for another 10 minutes.
  11. Turn off the stove and add 1 tbsp of salt, 5 tbsp of lemon juice, and finely chopped lovage. (or celery leaves/parsley) 
  12. Let the soup rest with the lid on for 15 minutes before serving.
  13. Serve it alongside fresh bread, sour cream, and spicy peppers.
