Ingredients
- 500 g pork loin (1,1 lb)
- 500 g pork bones (1,1 lb)
- 2 onions (200 g – 7 oz)
- 2 carrots (200 g – 7 oz)
- 1 parsnip (100 g – 3,5 oz)
- 1 bell pepper (100 g – 3,5 oz)
- 1 small celeriac (100 g – 3,5 oz)
- 250 ml (1 cup) tomato juice
- 2 tbsp tomato paste
- 2 potatoes (200 g – 7 oz)
- 5 tbsp lemon juice
- 2 tbsp salt
- lovage (or celery leaves)
- parsley
Directions
- Wash and cut the meat into medium-sized cubes.
- Wash the bones.
- In a large pot, put the meat and the bones to boil in 4 liters of water (1 gal) with 1 tbsp of salt for 1 hour.
- Collect and remove the foam with a slotted spoon or a strainer. (boiling the meat will create a foam that must be removed)
- Prepare the vegetables by peeling and washing them.
- Finely dice the onions, carrots, parsnip, celeriac, and bell pepper.
- Add the finely diced vegetables in the pot with the meat and complete with 1 liter of water. (2 pints)
- Add 250 ml of tomato juice and 2 tbsp of tomato paste.
- Let the soup boil together for 25 minutes.
- Cut the potatoes into cubes, add them to the soup, and let it boil for another 10 minutes.
- Turn off the stove and add 1 tbsp of salt, 5 tbsp of lemon juice, and finely chopped lovage. (or celery leaves/parsley)
- Let the soup rest with the lid on for 15 minutes before serving.
- Serve it alongside fresh bread, sour cream, and spicy peppers.
