Ingredients
- 300 g (10 oz) chicken breast
- 400 g (14 oz) potatoes
- 100 g (3,5 oz) celeriac (celery root)
- 150 g (5,3 oz) apples
- 150 g (5,3 oz) mayonnaise
- 1 tbsp mustard
- 1 tbsp of lemon juice
- 1 ยฝ tsp salt
- ยฝ tsp pepper
- preferred herbs (ex. parsley, dill, rosemary, oregano, basil, thyme, etc.)
Directions
- Put the chicken breast to boil for 35 minutes with 1 tsp of salt. Let it cool off.
- Wash the potatoes and put them to boil on their skin for 35 minutes, preferably at the same time as the chicken boils. (2 birds – 1 stone)
- Cut the boiled chicken breast into bite-sized cubes and proceed to chop the potatoes into small cubes.
- Add them in a large bowl.
- Finely grate the celeriac and chop the apples. Add them over the chicken breast and potatoes.
- Season the salad with salt and pepper to taste.
- Mix the mayonnaise with 1 tbsp of mustard and 1 tbsp of lemon juice and add it to the salad.
- Blend the salad well and serve.
