Ingredients
- 20 g (0,7 oz) brewing yeast
- 500 g (17,6 oz) cornmeal
- 1 kilogram (35 oz) wheat bran
- 200 g (7 oz) bread (preferably brown, whole flour type of bread).
- few cherry branches (optional)
- few lovage leaves (optional)
Directions
- In a large container, mix the brewing yeast with the cornmeal, 150 grams (5,3 oz) wheat bran and 700 ml (23,6 oz) water and let the mixture rest for a minimum of 6 hours.
- After 6 hours, pour this mixture into an even larger glass container and add the rest of the wheat bran ( 850 g / 30 oz) and add another 3 liters (101 oz) of water. Let the mixture rest for another 4 hours. Optional add a few cherry tree branches and lovage leaves for flavoring.
- Add another 8 liters (2,11 gallons) of water and 3-4 slices of toasted bread and let the mixture rest for another 4 hours.
- Strain the liquid and store it in glass containers in the refrigerator.
