Delicious Pig Brain Spread: Boiled, Mashed, and Blended With Oil, Salt, Lemon, and Onions. Perfect With Toast and Olives.

Pork Brain Recipe


  • 2 pieces of pig brain (360 g / 12,5 oz)                 
  • 200 ml (7 oz) vegetable oil                                  
  • 1 tsp salt                                                              
  • juice from half of lemon                                       
  • 1 onion
  • 100 g (3,5 oz) olives


  1. Boil the pig brain for 25 minutes.
  2. Mash, or mix the boiled brain with a stainless steel or silver fork until it becomes creamy. (you could also use a mixer or a blender with stainless steel paddles)
  3. Gradually add vegetable oil and blend just like when making mayonnaise. 
  4. Add salt and the juice from half the lemon. 
  5. Add finely chopped onions, blend, and serve it with toast and olives.
