Ingredients
- 1 kg (2,2 lb) potatoes
- 250 g prosciutto (8,8 oz) (can be replaced with pancetta or ham)
- 100 g (3,5 oz) olives
- 2 onions
- 2 bell peppers
- 5 tbsp olive oil
- 3 tbsp vinegar
- pinch of thyme
- salt and pepper to taste
- optional: 2 tbsp sour cream
Directions
- Wash and boil the potatoes on their skin for 35 minutes.
- Peel the potatoes from their skin, cut them into cubes, and add them in a large bowl.
- Cut the prosciutto (or the replacement), the onions, and the bell peppers julienne, and add them over the potatoes.
- Add olives.
- Make a vinaigrette out of 5 tbsp of olive oil, 3 tbsp vinegar, ยฝ tsp of thyme, and a pinch of ground pepper and pour it over the salad.
- Blend with care and season with salt.
- Serve. Additionally, you can also add 2 tbsp of sour cream when serving.
