One Salad, Many Diets: Roasted Red Pepper Bliss


  • 1 kg (2,2 lb) sweet pimento peppers
  • 2 tsp salt
  • 1 tsp pepper
  • 3 tbsp vinegar
  • 5 tbsp vegetable oil
  • 2 tsp lemon juice.
  • herbs (dill &/ parsley)


  1. Grill or roast the peppers until well cooked.
  2. When cooked, remove them in a lidded bowl (pan), add 1-2 tsp of salt, and let them rest with the lid on for the next 20 minutes.
  3. Proceed to clean their burnt skin with care. Avoid rinsing them directly under water, they will lose flavor and juice.
  4. Remove their stub and seeds and portion them in salad sizes.
  5. Make a vinaigrette out of vegetable oil, vinegar, lemon juice, salt and pepper.
  6. Pour the vinaigrette over the roasted bell peppers and season with freshly cut dill and or parsley.
  7. Serve the roasted pimento pepper salad with high protein meals such as pot roast, meatloaf, stews, steaks etc.
