Fried Eggplants Recipe

Ingredients

  • 2-3 eggplants
  • 3-4 tbsp flour
  • 2 tbsp vegetable oil
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 2 garlic cloves
  • salt and pepper to taste

Directions

  1. Slice the eggplants into rings.
  2. Sprinkle them with salt and let them rest and drain off excess liquid for about 20 minutes.
  3. Coat the eggplants with flour.
  4. Fry the eggplants on low-medium heat on both sides in 2 tbsp vegetable oil until golden.
  5. Place the fried eggplants on a paper towel to absorb excess oil.
  6. Make a sauce out of 2 tbsp of mayonnaise, 1 tbsp of sour cream and 2 crushed garlic cloves.
  7. Season the sauce with salt and pepper to taste.
  8. Pour the sauce over the fried eggplants and serve while hot.
