Ingredients
- 1 kg (35 oz – 2,2 lb) potatoes
- 200 g (7 oz) onions
- 200 g (7 oz) cucumbers
- 200 g (7 oz) bell peppers
- 500 g (17 oz) tomatoes
- 100 g (3,5 oz) olives
- 50 ml (1,7 oz) vegetable oil
- 35 ml (1,2 oz) vinegar
- 2 hard-boiled eggs
- 2 tbsp parsley
- 1 tbsp dill
- salt and pepper to taste
Directions
- Wash and boil the potatoes on their skin for 35 minutes.
- Peel the potatoes from their skin and cut them in the cubes.
- Wash, peel off, and clean the rest of the vegetables.
- Cut the onions and peppers, julienne.
- Finely slice the cucumbers into thin slices.
- Cut the tomatoes into bite-sized cubes.
- In a big bowl, combine all the cut vegetables with the boiled potatoes.
- Add thin slices of hard-boiled eggs if you consume eggs, otherwise omit adding them.
- Add olives.
- Make a vinaigrette out of 50 ml (1,7 oz) vegetable oil, 35 ml (1,2 oz) vinegar, salt and pepper.
- Pour the vinaigrette over the vegetables.
- Season with 2 tbsp of parsley and 1 tbsp of dill.
- Serve.
