Fresh Potato Salad Pleasure

Dive Into the Pleasure of Garden-Fresh Delight With This Vibrant Vegan Potato Salad - A Feast for the Senses and Palate.

Ingredients

  • 1 kg (35 oz – 2,2 lb) potatoes
  • 200 g (7 oz) onions
  • 200 g (7 oz) cucumbers
  • 200 g (7 oz) bell peppers
  • 500 g (17 oz) tomatoes
  • 100 g (3,5 oz) olives
  • 50 ml (1,7 oz) vegetable oil
  • 35 ml (1,2 oz) vinegar
  • 2 hard-boiled eggs
  • 2 tbsp parsley
  • 1 tbsp dill
  • salt and pepper to taste

Directions

  1. Wash and boil the potatoes on their skin for 35 minutes.
  2. Peel the potatoes from their skin and cut them in the cubes.
  3. Wash, peel off, and clean the rest of the vegetables.
  4. Cut the onions and peppers, julienne.
  5. Finely slice the cucumbers into thin slices.
  6. Cut the tomatoes into bite-sized cubes.
  7. In a big bowl, combine all the cut vegetables with the boiled potatoes.
  8. Add thin slices of hard-boiled eggs if you consume eggs, otherwise omit adding them.
  9. Add olives.
  10. Make a vinaigrette out of 50 ml (1,7 oz) vegetable oil, 35 ml (1,2 oz) vinegar, salt and pepper.
  11. Pour the vinaigrette over the vegetables.
  12. Season with 2 tbsp of parsley and 1 tbsp of dill.
  13. Serve.
