Ingredients
- 3 egg yolks
- 1 tbsp water
- 200 grams (2 sticks) butter
- 1 tbsp lemon juice
- Salt and pepper to taste (preferably cayenne pepper)
Directions
- In a glass or stainless steel bowl, add the egg yolks, and 1 tablespoon of water and whisk.
- Place the bowl over a pot with simmering water (double boiler). Make sure the bottom of the bowl doesn’t directly touch the water.
- Mix continuously the egg yolks until they start to thicken.
- Slowly add melted butter while continuously mixing, just like when making mayonnaise.
- Turn off the stove, remove the bowl from your source of heat, and add the lemon juice while continuously whisking.
- Season with salt and pepper (preferably cayenne).
- Serve with eggs, fish, vegetables etc.
