Easy Hollandaise Sauce Recipe

Ingredients

  • 3 egg yolks
  • 1 tbsp water
  • 200 grams (2 sticks) butter
  • 1 tbsp lemon juice
  • Salt and pepper to taste (preferably cayenne pepper)

Directions

  1. In a glass or stainless steel bowl, add the egg yolks, and 1 tablespoon of water and whisk.
  2. Place the bowl over a pot with simmering water (double boiler). Make sure the bottom of the bowl doesn’t directly touch the water.
  3. Mix continuously the egg yolks until they start to thicken.
  4. Slowly add melted butter while continuously mixing, just like when making mayonnaise.
  5. Turn off the stove, remove the bowl from your source of heat, and add the lemon juice while continuously whisking.
  6. Season with salt and pepper (preferably cayenne).
  7. Serve with eggs, fish, vegetables etc.
